Apothica at Night Introduces Vegan Cocktails, Mocktails and More

With winter approaching fast, we could all use suggestions for a cozy place to have cutesy drinks and a late-night bite. Imagine favorite crave-worthy comfort foods like mac and cheese, empanadas or chips and queso along with a pumpkin chai espresso martini set to a candle lit vibe.
You don’t have to keep wondering where you’re going to spend the cold months anymore thanks to local vegan hot spot Apothica’s new crafted cocktail bar. The intimate space sources high-end ingredients and spirits for its specialty cocktails, mocktails, beer and wine accompanied by a vegan night bites menu. These delicious offerings are 100% vegan with many allergen-friendly options as well.
Apothica is already well-known for its day hours as an apothecary–inspired coffee shop located in Cumberland. Regulars stop by for fresh roasted coffee, organic matcha and unique drink creations using house-made syrups such as caramel apple, vanilla maple, Nutella and birthday cake. The food menu includes tasty and savory picks including the black bean crunch wrap, breakfast burrito and my personal favorite, the banana chocolate chunk bread.
Vegan entrepreneurs, Eddy Sandoval and Christian Torres, took their experience of more than ten years in restaurant service to open this sanctuary back in 2020. Their homeopathic lifestyle and plant-based diet inspired the concept.
“Our promise is to use the most natural ingredients, avoiding artificial flavors, corn syrup, fillers, chemicals, unnecessary food colorings and any animal products,” they say.
Apothica at Night is taking their goal further as it is currently one of the only fully vegan serviced bars in the state.
While sipping on a yummy Salted Caramel espresso martini or a signature creation like the “Lost in the Woods,” you will notice the walls decorated with artistic expression. The owners feature local artist’s work to be displayed in their store.
“We’ve opened with featured artists, and we rotate the space with artwork by a local artist every two months,” they explain.
Sandoval has a background in art and art history, and made it a permanent feature in the cafe.
“Any artist can enroll, more information on the requirements will be on our website,” Torres adds. “We plan to have ‘gallery nights,’ where the artist can celebrate their art exhibit with family and friends.”
Apothica is the place to celebrate many rising talents through their own efforts of bringing vegan options to the community. The owners’ passion for mixology provides coffee and cocktail lovers with flavors and blends that are smooth, guaranteeing they will be back to try more.
“Apothica Cafe has grown to be a hub for creative minds alike, a safe-space or ‘third space’ as some say. We welcome all and are happy to share Apothica with you,” says Sandoval.
Apothica at Night celebrated its official opening on Friday, November 22nd.
