Lemon Butter Sauce
Serve with lobster, of course.

1 cup (2 sticks) butter
juice from 2 small lemons
1 tablespoon Dijon mustard
1–2 teaspoon mashed garlic cloves
2 teaspoons chopped fresh thyme
Melt butter in a small sauce pan or micro-wave until melted. Remove the clarified butter and discard the milk solids. Add remaining ingredients to clarified butter and season with salt and pepper.
Thai Curry and Spinach Sauce
An excellent dipping sauce for grilled scallops or for stuffing mussels.

1 tablespoon vegetable oil
2 tablespoons green curry paste
1 14-ounce can unsweetened coconut milk
1 cup chicken stock or low-sodium broth
2 teaspoons lime juice
2 tablespoons Asian fish sauce
¼ cup packed brown sugar
1 10-ounce package fresh spinach leaves
1 cup fresh basil leaves
In a medium saucepan, heat oil until smo-king and add curry paste, sauteing until fragrant, about 2 minutes. Add coconut milk, chicken stock, lime juice, fish sauce and sugar until sauce thickens, about 10 minutes. Meanwhile, cook spinach and squeeze dry. Puree spinach, basil leaves and n cup of sauce in a blender until smooth. Add mixture back to sauce. Serve warm.
Tartar Sauce with Capers
Pairs perfectly with crab cakes.

1 cup mayonnaise
2 tablespoons chopped fresh dill
2 tables s chopped Italian parsley
¼ cup chopped fresh chives
2 tablespoons minced shallots
2 tablespoons fresh lemon juice
½ teaspoon hot pepper sauce
1 ½ tablespoons capers, with about ½ teaspoon of their juice
Process ingredients until well blended. Season to taste with salt and pepper. Cover and chill. (Can be made one day ahead.)
Miso Sauce
A small dollop on oysters is delicious.

6 tablespoons sweet white miso
2 tablespoons rice wine vinegar
2 teaspoons sake
1 teaspoon brown sugar
½ teaspoon ground ginger
Mix all ingredients. Cover and chill.
Bring to room temperature before serving, thinning with water if necessary.
Spicy Cocktail Sauce
For those who like their oysters sweet and spicy.

6 tablespoons tomato ketchup
2 tablespoons horseradish
4 tablespoons orange juice
½ teaspoon dry mustard
dash of Tabasco
Mix all ingredients together. Chill.
