Miniature Salmon Pastrami and Onion Marmalade Sandwich

Ingredients: 1/4 cup soft cream cheese
24 slices cocktail pumpernickel bread
1 jar onion marmalade
1 tablespoon chopped capers
1 pound sliced all natural pastrami salmon
zest of 1 lemon
Preparation: Layer these appealing flavors to make a different kind of sandwich.
Spread a thin layer of cream cheese on 12 slices of bread.

Spread a thin layer of marmalade on remaining 12 slices. Sprinkle each slice with chopped capers.

Place two slices of salmon pastrami over cream cheese slices. Top with marmalade slice to create a sandwich.

Cut each sandwich from corner to corner to create a triangle, and serve. Makes 24 mini sandwiches.
