Chicken and Spinach Beggars' Purses |

| Ingredients: | 1 cup chopped, cooked spinach 1/2 pound poached, diced chicken I cup Boursin cheese 1 1/2 cups cream cheese 1 tablespoon crushed garlic salt and pepper to taste 6 3x3-inch phyllo sheets 1 pound butter |
| Preparation: | Prepare these a week or two in advance and then freeze. Place drained spinach in bowl. Add chicken, Boursin cheese, cream cheese, garlic, salt and pepper. Mix well. Brush phyllo sheet with butter. Place another sheet on top, butter again and repeat one more time, for three layers. Repeat with 3 remaining sheets. Cut each set of phyllo dough into 12 pieces. Place 2 tablespoons of mixture on phyllo sheet. Bring edges of each piece together to create a purse. Bake at 400° for 5 minutes or until golden brown. Makes 24 purses. |
