22 Bowen's Lobster Salad Sandwich

Ingredients:

1 pound fresh lobster meat (tails, claws and knuckles) 1 tablespoon fresh lime juice ½ cup celery, diced in ¼-inch pieces ¼ cup mayonnaise ¼ cup sour cream 1 tablespoon chopped parsley 1/8 teaspoon cayenne pepper ¼ teaspoon kosher salt 4 brioche or other soft rolls

Preparation: Cut lobster into bite-size pieces. Place in large bowl. In a separate bowl, mix remaining ingredients. Add this mayonnaise-sour cream mixture to lobster, folding gently so as not to break the meat. Can be stored in the refrigerator for up to six hours. To assemble, slice rolls in half. Place ¼ of lobster meat on each roll. Serves: 4
