It might seem counterintuitive to focus on soup in the middle of summer. But not when it's this good. Chef Jonathan Cambra's potato soup is oh so much more! A smooth puree of golden potatoes is only the back-drop for crunchy pancetta, a dome of luxurious duck rillettes and a just-crisp, still quavering quail egg. It's so regally construct-ed that you might be tempted to take its picture and leave it alone, but the pay off for digging in is well worth the guilt.
